Cherry BruschettaCherry Bruschetta (Serves: 1)


  • 2 slices of sourdough or rye bread, toasted
  • 1 tablespoon olive oil
  • 1/2 cup fresh cherries, pitted, coarsely chopped
  • 2 tablespoons finely chopped red onions
  • 2 tablespoons lime juice
  • ΒΌ cup reduced-fat mozzarella cheese, grated


  1. Preheat the grill.
  2. Brush toast with olive oil.
  3. Combine cherries, onions, lime juice and remaining olive oil; mix well.
  4. Top each slice of toast with tablespoon of cherry mixture.
  5. Sprinkle mozzarella and grill until cheese melts.
  6. Serve immediately.
