Recipes – Cherry Bruschetta
Cherry BruschettaCherry Bruschetta (Serves: 1)
Ingredients:
- 2 slices of sourdough or rye bread, toasted
- 1 tablespoon olive oil
- 1/2 cup fresh cherries, pitted, coarsely chopped
- 2 tablespoons finely chopped red onions
- 2 tablespoons lime juice
- ΒΌ cup reduced-fat mozzarella cheese, grated

Method:
- Preheat the grill.
- Brush toast with olive oil.
- Combine cherries, onions, lime juice and remaining olive oil; mix well.
- Top each slice of toast with tablespoon of cherry mixture.
- Sprinkle mozzarella and grill until cheese melts.
- Serve immediately.
